Designed to eliminate bottlenecks, the new layout rethinks how customers move through the space, creating a smoother, more intuitive flow from the moment they walk in. By blending the familiarity of a traditional restaurant with the structure of a modern, franchise-style system, the redesign brings clarity to every step of the customer journey. Every decision was made with intention and focused on improving both operations and the overall experience.
At the core of the renovation are key layout improvements that directly impact how the space functions. Registers have been relocated closer to the entrance to streamline ordering, while a dedicated to-go waiting area separates takeout traffic from dine-in guests. A clearly defined pickup window ensures orders are easy to collect without disrupting the flow, and a new beer and wine counter adds an extra layer to the experience, giving customers a chance to relax while they wait. Backed by hands-on leadership and quick problem-solving throughout the process, this transformation positions Lobster Claw to operate smarter, serve better, and stay relevant for the next 60 years.
